I was in Denver for work and sat down at the bar with a simple request for the bartender: “If I’ve never been here before and never make it back, build me the most memorable meal possible.” He didn’t hesitate, and absolutely understood the assignment. The lineup: blue corn empanadas, carne asada with chimichurri, elote hash, smoked gouda mac & cheese, butterscotch pudding, and a couple cocktails along the way.
