The 60-day aged ribeye was sliced and served with simple garnishes to highlight the great beef flavor. It was accompanied with grilled squash and delicious potatoes. The tuna crudo was light and fresh with a Vietnamese theme - topped with spicy peanuts, light chilis, lemon grass, and other garnishes.
