“This was our first time dining at Hyacinth, and we arrived early due to having tickets for a production at the History Theater. Hyacinth is a small restaurant, and rather than grab a table, we sat at the bar. For its size, the kitchen had quite a crew. Service was polite and professional, but lacked warmth. Hyacinth keeps its distance, and that felt weird. However, I grew up in NYC and travel to Europe, where engagement is integral to dining. I guess the Twin Cities can be a standoffish place.
